From 7 to 9 June 2026, the Cheese and Dairy Products Show will celebrate its 19th edition at Paris Expo – Porte de Versailles

Founded by master cheesemonger Alain Dubois, this professional event has become the unmissable gathering for all professionals across the dairy and cheesemaking sector.

This may seem obvious to cheese lovers, but sometimes it's good to go back to basics! Behind the infinite diversity of dairy products, there are eight major families of cheese, which reveal the wealth of expertise in the dairy industry.

Fresh cheeses, processed cheeses, spun cheeses, blue-veined cheeses, soft cheeses with a bloomy rind, soft cheeses with a washed rind, uncooked pressed cheeses and cooked pressed cheeses: these categories allow us to distinguish between the styles, textures and flavours of an incredible variety of products.

According to the CNIEL, there are nearly 1,200 varieties of cheese in France. This classification, sometimes referred to as the caseological nomenclature, is a valuable compass for navigating the fascinating world of cheeses.
